As I was cleaning the house before leaving this weekend for our trip to L.A., I thought of what I could possibly give as a gift for my lovely sister and my brother-in-law for being so kind to watch over our home and our two mini-dachshunds, Pawley and Maddie. So I decided to bake my ultimate favorite cookies as a small token of appreciation. I followed the recipe from the Southern Living " Incredible Chocolate Recipes " cookbook, on page 60 is the recipe for Heavenly Chocolate Chunk Cookies.
The Ingredients
2 cups plus 2 Tbsp. all-purpose flour
1/2 cup granulated sugar
1/2 tsp. baking soda
1 large egg
1/2 tsp. salt
1 egg yolk
3/4 cup butter or margarine
1 (11.5-oz) package semisweet chocolate chunks
2 Tbsp. instant coffee granules
1 cup walnut halves, toasted
The Recipe
1. Combine first three ingredients and stir well.
2. Combine butter and coffee granules in a small saucepan. Cook over medium-low heat until the butter melts and coffee granules dissolve while stirring occassionally. Remove from heat, and let cool to room temperature. ( Don't let butter solidify.)
3. Combine butter mixture, sugars, egg, and egg yolk in a large bowl. Beat at medium speed with an electric mixer until blended. Gradually add flour mixture, beating at low speed just until blended. Stir in the chocolate chunks and walnuts.
4. Drop dough by heaping tablespoonfuls 2 inches apart onto an ungreased baking sheet. Bake at 325 degrees for 12 to 14 minutes. Let cool slightly on baking sheet. Remove to wire racks to completely cool.
